This sauce is one of the staples of Italian cuisine as well as Lebanese cooking.
Here is my basic recipe:
Ingredients:
-One kilo tomato (ripe and chopped then mixed in the processor)
-A drizzle of olive oil
-4 cloves of garlic – finely chopped or pressed.
-Salt, pepper and cinnamon
-The famous cube of sugar
-Basil or any other herb – depending on what you are using it for.
Method:
- Add all the ingredients in a pot, except for the olive oil and the herbs; bring to a boil then reduce the fire and let simmer for 10 to 15 minutes or until it reduces.
- Add the oil and the herbs and remove from the stove.
TIP: When I add salt and all the spices to my tomato sauce, I also add a cube (or one spoonful) of brown sugar. This helps reduce the acidity of the tomato and brings warmth to the taste.
