It’s a bread as it doesn‘t rise as a cake would.

Still it is fluffy and light and makes a perfect base for breakfast if smudged with butter ( yes butter is good for you 😝) and some home made jam.

It works as a perfect snack when sliced to eat on the go but also as a nice comfort dessert, if served a bit warm with a scoop of vanilla ice cream or dulce de lecce! Yumm 😋

the ingredients below for the basic recipe. I added in brackets alternatives for a healthier option.

 

Infredients – for a pound bread:

3 eggs

1,5 cup sugar ( I replace with Stevia or a mixture of Agave syrup and crushed dates)

2 table spoon vegetable cooking oil ( canola is good)

2,5 cups flour (use gluten free) or opt for oat flour

1 table spoon baking powder

1,5 tea spoon salt

1,5 cup fresh milk or water

2 bananas (best when ripe)

Method:

Mix all ingredients at the same time.

Line a baking tin with butter and a sprinkle of flour.

Add the mixture and

Place in a warm oven.

Bake at 150 degrees for 40 minutes.
