Kama are desert truffles that come out right after the rain – yes it does rain in our desert 🐪 🐪 🐪
This species is different from the European one and although the price will not exceed US$250 per kilo – whilst the European one can reach up to US$2,200-, Kama is delicious, highly nutritious and so easy to add to any meal. It’s now in season and mine was a gift from Saudi desert. I overindulged in this vegetable protein 😊 and prepared it in so many ways!
Here is one.
Ingredients for 4 persons
Arborio Rice – 2 cups
Kama- one cup sliced or cut in chunks
Onion- 1 piece
Garlic- 3 cloves
Peas – half a cup (optional)
Stock- one liter. This can be from chicken, meat or just vegetables
Rosemary- fresh, a few leaves
Olive Oil- 3 spoonfuls
Parmesan Cheese- grated, half cup
Salt, Pepper, Nutmeg, Cinnamon to taste.
Method
In your cooking pot, heat the olive oil and sauté the onions and garlic. When translucent add the pepper, cinnamon, and nutmeg. Rosemary as well.
Then add the diced or sliced Kama and sauté for another few minutes.
Add the rice, and turn for a few minutes to coat properly.
Now you start adding the stock, one cup at a time while stirring continuously.
This operation continues until you have added 3/4 of the stock.
Now you can add the salt to taste.
And the peas if you wish.
Reduce the heat to the minimum and close the lid. But keep the watch as you need to add the stock as the rice is cooking.
It might take another 10 minutes.
Just before turning off, add the cheese and fold in slowly.
Serve immediately 🍚
