Ingredients for two:

  • Green lentils 100 grams

  • Rice, American parboiled 30 grams

  • Onion 1

  • Olive Oil 2 spoonful

  • Salt pepper to taste

Preparation:

Rinse the lentils thoroughly and keep to drain

Rinse the rice and soak in water for 15 minutes, then drain and keep

Dice the onion and sautee in one spoon olive oil; make sure you do not burn the oil.

Add salt on the onion to help cook.

Add the lentils and cover with water leave to cook for 25 mins

At that time add the rice and keep cooking for another 20 mins. You might have to add water to ensure rice cooks right.

Towards the end add the remaining spoonful of olive oil and switch off.

You can eat warm or cold. Best with a cabbage salad made of shredded cabbage and a sauce made of olive oil, lemon juice, one smashed garlic and some salt.
