This fresh and healthy salad uses mostly herbs with quinoa

Ingredients for two:

  • Quinoa- 100 grams

  • Parsley- a small bunch or 30 grams if chopped

  • Fresh Mint- a few sprigs or 15 grams chopped

  • Spring onions – 3 to 4 pieces chopped

  • Tomato- 1 beef tomato

  • Onion- 1 small diced

  • Olive oil- 1 spoonful

  • Lemon- juice of 1 lemon

  • Salt, pepper to taste


Start by rinsing the quinoa a few times.

Set in a pot, cover in water and cook for 15 minutes or

as per instructions on the package (al dente is best)

Meanwhile dice the onion, the tomato and chop the parsley.

Once the quinoa is cooked rinse again and set to dry.

Mix all the ingredients together including all the seasoning.

Enjoy it cold!
