A Winter Staple Recipe

Ingredients (for 4 servings)

-Half kilo of pumpkin peeled, cubed

-One small potato, peeled and cubed

-One onion – finely chopped

-One spoonful oil or ghee

-Turmeric powder – one spoonful

-Salt and pepper to taste

-2 spoonful fresh cream – for cooking- (optional)

Method

Saute the onion in the oil or ghee until translucent. Add the pumpkin and the potato and cover with water. Add the salt and bring to a boil. Reduce the fire and let it cook until tender.

Once cooked, there would still be enough water to cover the vegetables; use the food processor to puree the whole. Now add the turmeric and the pepper. Let simmer on low fire for 5 minutes. Add the fresh cream and immediately remove from the stove. If you like to give it more fire you can add some ground paprika.
