Zucchini Casserole
Ingredients for 4 persons

Zucchini 3 pieces green and yellow
Onion, 1 piece diced
Garlic, 3 gloves diced finely
Tomato paste, 3 spoonfuls
Minced beef 250 grams
Vegetable oil, 1 spoonful
Vegetable margarine or ghee, 1 spoonful
Salt, pepper, cinnamon, turmeric: a pinch of each
Spring onion, diced for presentation.


Heat the oil and margarine in a cooking pot: you can choose to drop the margarine but then use 2 spoonfuls oil.
When hot, add the onion and garlic and let it turn golden.
Add all spices but not the salt yet.
Now add the mince meat and let cook for a few minutes.
Pour in the tomato paste and mix well.
Now you can add the water and the salt.
Mix well, cover the pot and let it come to a boil for 2 minutes.
Now add in the zucchini cut in chunks or cubes.
Lower the fire and let it simmer for 20 minutes.

Serve with white rice 🍚
